Breakfast Bake

My body is pretty much comprised of 25% water and 75% a variety of egg muffins. My percentages might be a little off but you get the gist. Egg muffs were ALL I was eating for quite some time. I’m not tired of eating them by any means, but it’s always good to mix things up a bit to keep things exciting in your mouth. #thatswhatshesaid Har har.

So I thought to myself, “If I can’t eat egg muffins, what else is easy to pack up, prep a large amount of, and I’d want to eat for breakfast?” EGG MUFFINS! DAMMAT. Okay, fine. HOW ABOUT EGG MUFFINS IN A DIFFERENT FORM?! Okay, that might work. So, I pretty much made a gigantic egg muffin. Hahahaha I love it. You’re going to love it. Unless you hate eggs, then you’re not going to have a good time (in your mouth). #thatswhatshesaid Har Har

BREAKFAST BAKE

Paleo Catwon Breakfast Bake

Ingredients:

  • 1 large sweet potato (I used a Japanese yam)
  • 1/4 lb. ground turkey (I just made that up. You’re going to buy ground turkey/beef in about a pound’s worth anyway so chill, you’ll have enough)
  • 1 cup of spinach (Is that weird? Who measures spinach in cups..? I’d say more like a ginormous handful
  • 12-14 eggs (I used 14)
  • 3-4 baby heirloom tomatoes
  • 2-3 fresh basil leaves (you can sub 1 tsp dried basil)
  • 1/2 tbsp Trader Joe’s Everyday Seasoning
    • If you don’t have TJ’s seasoning on hand, you can sub with a mixture of the below:
    • black pepper
    • coriander
    • onion powder
    • garlic powder
    • chili pepper
    • paprika
    • mustard seeds
  • sea salt
  • olive oil

Directions:

  • Preheat oven to 350 degrees
  • Peel & slice sweet pot into thin slices (1/4 inch or so)
  • Coat a 7″ x 11″ baking dish with olive oil (you can use coconut oil or ghee)
  • Layer the sweet pots on the bottom of your baking dish
  • In a separate bowl, mix ground turkey with all seasonings, except for the fresh basil
  • Layer ground turkey over potatoes; flatten the meat
  • Sprinkle some (about half) chopped fresh basil on top of the meat
  • Add layer of raw spinach; flatten best you can
  • Add whole eggs to the top of the dish. I planned on using 12 eggs but I had some gaps, so I added 2 more. I would just use enough to fill the top layer.
  • Depending on how large your baby heirloom (or cherry) tomatoes are, slice thinly and place them between the yolks at the top of your dish.
  • You’ll have spinach leaves poking through, try to keep them down.
  • Sprinkle the rest of your chopped basil on top
  • Generously season the top of the dish with more TJ’s Everyday Seasoning, black pepper & sea salt
  • Bake for 30 minutes and check with a chop stick or knife. Poke the Breakfast Bake in the center of or near one of the yolks in the middle of the Bake – you should be able to tell if the eggs are baked through or not.
  • ***Mine were a little wet and wiggled quite a bit after only 30 minutes; some eggs were cooked, some weren’t and the meat was REALLY pink.
  • Continue cooking for another 10 minutes if yours isn’t all the way cooked through and check every few minutes after that. I cooked mine for a total of 40 minutes. The eggs on the edges of the Breakfast Bake were more well-done than the ones in the center.

***I personally don’t really like the texture or taste of egg muffins or frittatas that use eggs that are scrambled before baking. I’m not sure what it is. They’re very spongey and they deflate after sitting. I also like the taste of a whole yolk and I love hard-boiled eggs so this type of Breakfast Bake is perfect for me. They are similar enough to my whole-egg egg muffins but different enough to mix things up.

I made this Breakfast Bake last Sunday and packed a slice for breakfast every day this past week. I added a little bit of sugar-free Crystal hot sauce on top and it was PERFECT! You can also top this with cold avo slices if you fancy that.

Poor little dude… Hurls has been feeling a little under the weather, battling yet another ear infection and food allergies. He’s been throwing up quite a bit and that’s been wiping him out recently. The doc put him on a restricted diet and he’s taking several meds that keep his energy at a low level. He’s being a great sport though. He even smiles when he sleeps.
