Slowcooker Beef Stew

Did I tell you I started taking guitar lessons? WELL I DID. AND IT IS SO FUN! AND I SUCK AT IT. BUT I DON’T CARE. BECAUSE IT’S GONNA BRING ALL THE BOYS TO THE YARD. If you read my #AboutMe section, you’d know that my first dream was to become a YouTube superstar. I haven’t given up on that dream. My two rap videos may or may not have been deleted off the interwebs but I might come back to amateur YouTube stardom with a guitar in hand and wearing slightly less baggy clothes. I started lessons with Damon at Axes of E’ville. Damon is the best! He’s funny and totally dreamy. Oh, and he teaches guitar real good too.

I’ve learned 9 chords so far. WATCH OUT YOUTUBE!

WHAT I ATE TODAY

Salmon + baked broccoli and cauli.

Can’t think of a good way to season your veggies? Melt some ghee, mix in ANY combo of herbs. Here I have basil, parsley & oregeno with some sea salt. I dipped the cauli heads into the mixture, placed them onto a baking sheet and baked for 15 min (<– I totally made that time up bc I don’t remember but I sounded like I knew what I was talking about right?! Anyone can write a food blog……)

JACKFRUIT

Jackfruit is one of my fave fruits! It looks like a dinosaur egg & is a biOtch to peel but it’s totes worth it. It took me 30 minutes to peel less than 1/4 of this jackfruit. My mom taught me to save the seeds & boil them for another snack. I wasn’t paying attention but I probably boiled them for about 15 minutes (<– I did it again. Totally BS’d that time guess #gigglesnort) on medium high. Peel the outer layer & enjoy! They taste like chestnuts. I have no idea about the nutritional content of these seeds so we could be eating poisonous garbage for all I know. Why do you even follow me?!

SLOWCOOKER BEEF STEW

I was always a hefty child (thanks, Dad) and one of my favorite comfort foods was homemade beef stew. Now that I’m a hefty adult (thanks, donuts) I can make my own beef stew!

Paleo Catwon Slow Cooker Beef Stew

INGREDIENTS

  • 2 lbs stew beef
  • 1 medium yellow onion, chopped
  • 5 carrots (I used rainbow carrots bc I’m faaaancy), coined
  • 1 6-inch piece of daikon radish, chunked (yes, that’s a word; don’t look it up)
  • 2 cups baby portobello mushies, chopped in half
  • 2 cups beef broth
  • 3 tbsp tomato paste
  • 2 tbsp tapioca flour
  • ghee
  • 2 bay leaves
  • 1 tbsp red wine vinegar (optional for strict paleo-ers)
  • 1 tbsp balsamic vinegar
  • 1 tbsp granulated garlic pow
  • 1 tbsp paprika
  • 1 tsp pepper
  • 1 tsp sea salt
  • 1 tsp thyme
  • 1 tsp parsley
  • 1 tsp coriander
  • 1 tsp sage

DIRECTIONS

  • Sear beef in some ghee on stove, medium high heat, until browned on all sides
  • Add salt, pepper and 1 tbsp red wine vinegar to searing beef
  • Remove beef from stove, place in Crockpot
  • Saute chopped onions on stove in ghee and leftover beef juices
  • Remove cooked onions, place in Crockpot
  • Add all seasonings and ingredients into slowcooker EXCEPT the veggies (carrots, mushies, radish) and tapioca flour
  • I set my Crockpot on low for approx 5.5 hours (because that’s how many hours I had before I had to leave the house in the morning – I food prepped pretty late..)
  • In the morning before you leave the house or when you wake up, add the veggies
  • Add more brother if liquid is too low
  • 6 more hours on low
  • When ready to eat, heat 1 cup of broth on the stove until it simmers
  • In a small bowl, mix 2 tbsp tapioca flour with a little cold water, mix well
  • Add tapioca flour liquid mixture into the broth
  • Mix until thick
  • Add the thickened broth to the Crockpot, mix
  • Warm for a bit
  • Remove bay leaves before eating
