Don’t eat rice? No prob. This cauli-risotto will blow your grain-free mind. I know the photos suck, but I’m not a photographer, I’m a lazy cook, sOo….
CAULIFLOWER RISOTTO
Ingredients:
- 1 medium cauliflower, finely chopped (rice size)
- 5 cloves sliced garlic
- 2 gloves sliced shallots
- 3-4 tbsp ghee
- 1 cup of white cooking wine
- Approx 2 cup vegetable stock/broth
- 2 tsp sugar-free fish sauce
- 3 tbsp water
- 1 tbsp arrowroot starch/powder
- few shakes of parsley
- pinch of salt
Instructions:
- Cook garlic & shallots in 1 tbsp ghee on medium heat
- Add cauliflower & 1 more tbsp ghee
- Stir & let ghee melt
- Add 3 tbsp water, stir
- Cook until water evaporates a little
- Add 1 cup white cooking wine
- Add salt to taste, stir
- Cook until white wine reduces almost entirely
- Add 2 tsp fish sauce
- Add 1/2 cup vegetable stock/broth
- Add 1 tbsp arrowroot starch/powder
- Cook until liquid evaporates until about 1/4 is left
- Stir
- Add another 1/3 cup vegetable stock/broth
- Cook until most of the liquid evaporates
- Add another 1-2 tbsp ghee, let it melt in as you stir
- Turn off heat once ghee is melted
- Sprinkle parsley on top
- Serve
I had my family over this night & we also baked some pretty tasty chighs.
