Powerful Paleo Superfoods

When I started dabbling in a little Paleo back in 2011, I ran across Heather Connell’s blog Multiply Delicious. That’s when I made my FIRST ever paleo recipe: these freakin’ awesome Paleo Banana Dark Chocolate Cakies. It is still one of my all time favorite simple paleo dessert recipes and they also hold a deeper meaning to me. After making these healthier cakies that tastes great, I wanted to learn more about this lifestyle of eating with real, whole foods as an alternative to eating a commercially healthy diet of low fat, low carbs, low calories and low satisfaction. Going from eating 500 calories a day to try and lose any and all fat (the wrong way) to nurturing my body with tons of nutritious whole foods has made an enormous difference in my life and the satisfaction I have for my own body and health.

I started looking into Paleo a lot more and pinning the crap out of paleo recipes, reading a ton of paleo blogs and started to learn the why’s behind this new paleo lifestyle. So, even though they are simple cakies from Healther’s blog, I’m very thankful I ran across her site and appreciate her knowledge of nutrition and food more than she probably knows.

So, you can’t even imagine my excitement when she contacted me about her new cookbook, Powerful Paleo Superfoods. I received a copy in the mail and have made a bunch of delish recipes from her cookbook already. They are really simple and basic recipes that anyone can follow. Now, I’m NOT playing, because ya’ll know I can’t follow a recipe if my life depended on it and I’m too lazy to buy or find rare ingredients for complicated recipes. #aintnobodygottimefodat So, you’ll be really happy to know all of Heather’s recipes in this cookbook are geared towards normal people like you and me (although, I’m a little weirder than normal) who want to cook tasty and just real good food. This isn’t just a normal cookbook with only recipes either. She packs it full of nutritional information giving readers an easy guide to getting the best out of a primal diet including power proteins, super fats, greens and fruits. This is a really great book for paleo beginners or anyone just a little curious about the paleo lifestyle.

One of the recipes I made from Heather’s cookbook is her SLOW COOKER CHICKEN, SWEET POTATO AND KALE STEW. Um, yoms.

Paleo Catwon - Slow Cooker Chicken, Sweet Potato and Kale Stew

INGREDIENTS:

  • 1 lb. skinless, boneless, pasture-raised chitties
  • 1 yellow onion, diced
  • 3 carrots, peeled & cubed
  • 1 large sweet pot, peeled & cubed
  • 3 cloves of garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/3 cup tomato paste
  • 3 tbsp balsamic vinegar
  • 2 tsp gluten-free yellow mustard
  • 3 bay leaves
  • 1 bunch kale, stems removed & broken into pieces
  • sea salt & pep to taste

DIRECTIONS:

  • wash chitties & cut into bite-size pieces
  • place chitties into slow cooker
  • add diced onions, cubed carrots, cubed sweet pots, garlic, chicken broth, tomato paste, balsamic vinegar, mustard & bay leaves (errrthang but the kale)
  • stir everything
  • turn slow cooker on high for 3-4 hours or until carrots & sweet pots are tender
  • add kale, stir to combine
  • cook for 1 more hour
  • remove bay leaves before serving
  • add salt+pep to taste

I made a huuuuuge batch of this hearty stew in my Crockpot and had my family over for dinner. I even had leftovers for the week as well. That’s why I love slow cooker recipes- meal prep done for the next few days :)
