GARLIC BALSAMIC PORK SPARERIBS
I’ve been getting home pretty late this week month year because work (and life) has just been overwhelming. I’m struggling with trying to find a balance in my life with work, Crossfit, food (cooking and eating) and everything else. If I get off work too late, I miss CF class and/or I don’t have time to cook when I get home and then it’s time to go to sleep to go back to work in the morning! AHHH Vicious cycle of life. So my pretty awesome little brotato, Steven, has been helping a sista out (that totally worked out there) and cooking dinner most nights these last few weeks. Or he’d at least help me get things started and I would jump in when I get home so the task of prepping and cooking a healthy meal isn’t as daunting. He’s been a lifesaver. #thankful
So last night was no different. I strolled in at about 9pm really exhausted and just OVER IT. I wasn’t going to workout, cook, eat, shower, wear a bra, brush my teeth (haha), or anything healthy for the mind or body. I immediately stripped off the work clothes and jumped into the laziest sweats from head to toe. As I was trolling Instagram upstairs, I smelled something….. fucking delicious.
I thawed out some pork spareribs the other night but never had a chance to cook them. My brotato texted me at work earlier and asked “what is that meat in the fridge and how do I cook those things?” So I texted him back with what I would do if I were cooking them. Turns out he followed my quick text recipe and they turned out suh guuhhhhd. Sorry, I lose my ability to enunciate when I’m excited about food. :)
My text recipe went something like, “i dunno dude. they’re spareribs. so they have bones. cut them between the bones into small pieces and then cook with like garlic, garlic pow, balsamic and fish sauce or some combo like that” AND THERE’S YOUR RECIPE FOLKS! Haha Man, you guys must hate me. #worstrecipemakerever #nevermeasureanything #sorraaaay
INGREDIENTS:
- garlic
- garlic pow
- balsamic vinegar
- sugar-free fish sauce
- savory (<– that’s a spice I never heard of but my bro bought it & used it)
*Sorry no measurements here bc I didn’t cook them but he just eye-balled it anyway.
COOK TIME & INSTRUCTIONS: 16-20 minutes on low, covered, letting one side brown before flipping over & cutting into pieces to check if cooked through. Uncover near the end.
Brotato also made some cabboodles with shredded cabbage, ghee, garlic, garlic powder, paprika and thyme.
I really really loved this dish you guys! It was so tasty and made the entire house smell like pork. And that’s like, the dream. So get to it!

Speaking of saviors (my bro and pork), this guy has been my everything. He sure is getting used to the bed-life and we have our #CatwonHurlwon cuddle time moments which I live for.
